Using a Maple Syrup Recipe

According to OChef.com, if you are substituting maple syrup for white sugar, use 3/4 cup of maple syrup for every cup of sugar the recipe calls for. Ochef also recommends to  decrease the total amount of liquid in the recipe by about 3 tablespoons for each cup of maple syrup you use.

I like to add a combination of healthy sweeteners in baking. Often I use combination of maple syrup with either raw honey, black strap molasses. date sugar, Rapadura, and/or fruit juices. This adds a interesting combination of tastes, but also provides the health benefits that all of the alternative sugar sweeteners offer. It leads to a finished result that is quite lovely for baking.
