Guest Blogger- Cookbook Author – “Cooking with Coconut Flour”

When I first started experimenting with gluten-free baking I quickly became discouraged. It required four or five different types of flour plus an assortment of other ingredients like xanthan gum, vinegar, powdered milk, etc. Baking was a chore and the end result wasn’t always as I expected.

That’s why I fell in love with coconut flour—a relatively new gluten-free flour. Unlike other gluten-free flours you don’t need to combine it with a dozen other ingredients in order to make delicious tasting baked goods. Baking with this wonderful flour is relatively simple. 

Basically all you need is coconut flour, eggs, and oil. Mix them in a bowl and bake. What could be simpler? And the end result is comparable in quality to products made with wheat flour.

China and Europe Ban BPA – Avoid All Plastic, Even “BPA Free!”

Wednesday March 15, 2010- This weekend the Shanghai Daily reported news that BPA, otherwise known as Bis-phenol A, is now banned from in anything that children could either drink out of, or eat from. According to a recent article in the Mother Nature Network, last week a European ban on BPA went into effect when the EU joined other countries such as Canada and the United Arab Emirates in banning BPA from children’s products.

Health Benefits of Carob

Carob chips and carob powder are wonderful to use in healthy baking. They can be used instead of chocolate and/or a combination of chocolate. In being a mommy of a two year old and a three year old,  I have the natural desire to want to bake sweet treats for my little pumpkins, but I have NO desire to give them sugary chocolate that is unhealthy for them and carob is a wonderful, healthy alternative.
