YUMMY! Peach and Blueberry Wholegrain Crumble For The Holidays


With the holidays approaching, all of us will be indulging in fabulous dinners. To lighten things up on the dessert side, try making a healthy fruit crumble with whole grains! This healthy dessert is easy to serve for large groups of people and the leftovers also make  a wonderful healthy breakfast that kids love.

Most crumbles use butter and white flour, but this delicious crumble offers you fiber, protein and it uses grape seed oil which is a healthy oil. 

TIP: Costco sells big bags of peaches and organic blueberries which are ideal to make this treat! You can make it any month of the year, even when a specific fruit isn’t in season!

Delicious fruit topped with crumbled oats, and whole grains make this crumble fruit dessert delicious!

 Ingredients of the Peach and Blueberry Whole Grain Crumble

Fruit Filling: 

  • 3 cups of frozen peaches
  • 1 cup of frozen blueberries
  • 1 cup of chopped walnuts
  • 1/4 cup of orange juice
  • 1 teaspoon of cinnamon
  • 1 teaspoon of pumpkin pie spice
  • 1 teaspoon of ground ginger
  • 2 tablespoons of corn starch
  • 2 tablespoons coconut sugar (optional)

Crumble Topping

  • 1 cup of blanched almond flour (I like the Honeyville brand)
  • 1/2 cup of barley flour
  • 1/2 cup of oats
  • 2 teaspoon of lemon rind
  • Juice from 1/2 of lemon
  • 1/4 cup of agave syrup
  • 1/4 cup of grape seed oil
  • 1 teaspoon of vanilla
1. Mix the corn starch together with the lemon juice, lemon rind, orange juice and agave.
2. Mix fruit with mixture and add the walnuts.
3. In a separate bowl mix the flours, oats, agave and oil together until you have a wonderful crumble texture.
4. Pour the fruit mixture into a baking pan and bake for 20 minutes without the crumble.
5. After 20 minutes, take out of oven and sprinkle the crumble all over the top of the fruit.
6. Bake for another 25-30 minutes until the crumble is golden brown.
7. Let it cool for at least 20 minutes before serving.
This treat can also be wonderful for a delicious healthy breakfast!
