A Healthy 10 Grain Pancake Mix To The Rescue!

I love to cook, I love to bake, I love to play with electronic gadgets, I love to travel, I love to be spun around the dance floor, ………..and I love to go to spas that have candles and waterfalls EVERYWHERE! Yes…..I day dream…….ahhh.

As a mom with two kids under 3, spas, travel, spinning around dance floors and free flowing baking isn’t always in the cards. Sometimes it is difficult to just get dinner on the table PERIOD.
So I understand the realities of life and  totally appreciate that not everyone has a hobby of baking. Not to mention that all moms face “those times.” Those times we don’t have time to cook and bake, or those times when we are TOO tired to even think about it. This is when using healthy pancake mix is a perfect fit!

The great news is that I found a whole grain pancake mix that I LOVE from Bob’s Red Mill. Bob’s Redmill pancake mix uses 10 different whole grains………..10 of them to be exact. Can you believe that!  I use a lot of whole grains in my recipes, but I have never baked any recipe from scratch using 10 whole grains! This would be very time consuming to make yourself for even the most passionate baker. With the Bob’s Redmill pancake mix, you get the whole grain goodness yet the  light and fluffy taste that comes from using so many different flours.

Why I Don’t Buy “Regular” Pancake Mixes

1. Most pancake mixes are nothing but white sugar, white flour, baking soda and chemicals. (Empty calories)

2. It is just as easy to add the whole ingredients myself in step number 1, as it is to use a pancake mix. (It doesn’t save you any time!)

3. When I make pancakes from scratch, I add use whole grain flours and natural sweeteners.

  • 90% of the time, I make home made pancakes from scratch. They taste so good, they don’t have any chemicals in them, it is easy to do, and you can make them in a healthy way using whole grains and natural sweeteners.

Anyone can put together white flour, baking soda, baking powder in about 3 minutes flat. Why do you need to buy an expensive pancake mix to do this? The pancake mix still requires that add eggs, milk, yogurt, buttermilk etc……what time are the mix actually saving you?

However, 10% of the time when you still want to eat a healthy breakfast but you just don’t have time……..well that is where Bob’s Redmill pancake mix comes in.

Why I Recommend Bob’s Red  Healthy Pancake Mix

When making healthy, whole grain pancakes, things are a little different. In healthy baking, combining multiple healthy whole grain flours is THE SECRET to making amazing tasting healthy pancakes that are really good for you.

  • If you just use whole wheat in making pancakes, they will have a very heavy feel, but if you combine whole wheat with other whole grain flours, you can literally can eat a pancake that is light, delicious, yet very healthy for you like Bob’s Redmill pancake mix.

The challenge is, in order to do this, you have to STORE multiple flours and  buy all these different types of flours (which is EASY to buy if you know where to go.) That leads to storing the whole grain flours. They should all be in the refrigerator or the freezer. Not everyone is able to do this all the time.

Living Healthy Mom Variations To The Bob’s Red Mill 10 Grain Pancake Mix:

I did try to make this pancake mix just as the recipe had it just so I could let my readers know the findings.

In my humble opinion, the pancakes were……..well, okay. They were not bad, but they were not GREAT as I have got them to taste with a few, subtle changes such as the following:

#1. I added non fat unsweetened plain yogurt instead of water and then added coconut milk until the texture was the way I like. (If you like thin pancakes you want a thin batter, if you like thicker pancakes, the batter will be thicker).

#2. Today I added 1/2 cup of applesauce, unsweetened condensed milk and carob chips. YUM!

MY KIDS LOVE CAROB CHIPS IN THEIR PANCAKES!

#3. Use almond milk instead of coconut milk for #2.

#4. I also use grape seed oil instead of canola oil.

#5. I added 1/2 cup of Quinoa flour today………….I like the taste that it gave to the pancake mix. That made 11 whole grains we ate for our  healthy breakfast!

I am now on a mission to find baking mixes that are HEALTHY, easy and taste great during those times when all of us as moms don’t have time to bake from scratch.

In saying that, it doesn’t matter how little time I have. I REFUSE to buy any baking mix that use food coloring, chemicals,  and/or would not healthy for my family. What is the point of that?
