Great Granola Nut, Cranberry, Coconut Cereal Recipe

Ahhh! There is nothing better than the amazing smell of  honey, oil, nutmeg and cinnamon baking slowly on top of oats and honey!  Try this hearty, healthy cereal with almond milk, or nonfat yogurt mixed with berries and honey. A delicious treat that your entire family will LOVE!

If you buy homemade granola in a health food store you can easily spend $10 for a little bag that will only last you one or two days for two people. Why do that? Instead you can easily make your own granola cereal and freeze it to last for a month for your entire family to enjoy!

My kids love this granola cereal recipe and so does my husband. The best part is that when they have my granola for breakfast,  ………..I know they are starting their day right!

There is nothing better than home made granola. It is so easy to make too!

Honey Nut Granola Recipe With Coconut and Dried Fruit

  • 8-9 cups of whole grain rolled oats (Tip: Don’t use instant oats) If you go with Bob’s Red Mill this would be 1 bag.
  • 3 tablespoons of vanilla
  • 2 teaspoons teaspoons of cinnamon
  • 1 1/2  teaspoon of nutmeg
  • 1/2 cup of chopped, unsalted raw cashew nuts
  • 3/4 cup of chopped unsalted raw almonds or walnuts
  • 3/4 cup of chopped pistachio nuts
  • 1/4 cups of lightly salted whole peanuts (This is the only salt I use in the entire recipe)
  • 1/4 cup wheat bran or oat bran
  • 1/4 cup of  raw sunflower seeds
  • 1 cup of  grape seed oil. (Can also use a light olive oil)
  • 1 cup of RAW honey (Make sure the bottle says raw honey on the outside. Processed honey is no better for you than sugar.)
  • 1 cup of chopped dried cranberry (or any dried fruit) to add after you make the granola. (Tip: Do not cook the dried fruit as it will burn quickly)
  • 1/2 cup of unsweetened coconut

Directions of how to make the granola recipe:

  • Chop nuts with a miniature processor or a knife for a heartier taste.
  • Put grape seed oil, raw honey, nutmeg and cinnamon in a frying pan. Turn burner on medium heat until it just begins to simmer. Turn off as soon as it starts to simmer. Do not overcook. (You will have an amazing smell in your house)
  • Take pan off of burner and add vanilla. Mix together.
  • After you chop the nuts, put the oats, bran and nuts together mixed well in a bowl.
  • Pour the honey/oil mixture in the bowl slowly, and mix all of the ingredients so the honey vanilla mixture is all over the oats and nuts.
  • Line cooking sheets with parchment paper (This will save you a lot of time in cleaning up and it is easy to pour the cereal from the paper into a glass storage container.)
  • Spread the granola mixture on two cookie sheets.
  • Cook at 300 degrees for 35 minutes. (If you only have 1 oven that isn’t a convection oven, bake 1 sheet at a time. ) The cereal won’t cook right if there are two pans in the same oven.
  • Once the timer goes off, take a spatula and mix the cereal around so the browned part is on the bottom and the uncooked part has a chance to the top.
  • Every 15 minutes set the alarm to mix the granola until all sides get slightly brown.
  • Depending on your oven, this make require 1-2 (15 minute intervals) It is typically 45 minutes total for most ovens.
  • Take granola out of oven and add the coconut and dried fruit. Mix together and let it cool.
  • Once it is cooled, pour in a glass container and store in the refrigerator or freezer. I typically make a lot at one time and store it in the freezer. (You can eat it directly from the freezer without any defrosting time)

NOTE: It is very important to store home made granola in the refrigerator or freezer. The nuts, wheat germ and oil can easily become rancid if not stored properly.
